The Drink: Hot Buttered Soul

Where: Midnight Rambler, at the bar with a  friend who keeps your secrets

When: Friday, 9:30 p.m. after dinner

What’s in it: Brown butter bourbon, pecan orgeat, lemon, cinnamon, cayenne pepper, and candied pecans

The work that goes into the Hot Buttered Soul is astounding—no surprise when you consider Midnight Ramblers’ Chad Soloman is the mind behind it. Take, for starters, the bourbon, which is fat-washed using a technique wherein cultured butter is browned and infused into the bourbon. After chilling, the solid butter fat is skimmed off, leaving its nutty richness behind.

The brown butter bourbon meets it match with housemade orgeat—a clarified, filtered blend of roasted pecans, brown rice, cassia bark, and demerara sugar. While heavenly to sip, the drink’s garnish might steal the show. Three (or four if you’re lucky) sweet, spicy, crunchy, candied pecans dot the mound of ice, making it a winter dessert in a glass.
