Broiled Rock Shrimp with Garlic Butter

Straight from the kitchen of CBD Provisions: Chef Richard Blankenship is going to help you cook up some good old Southern comfort food on this chilly day. His recipe for broiled rock shrimp with garlic butter and lemon isn’t just easy (seriously, it is!), it’ll also pair perfectly with grits, if that’s your style.

  • 6 oz fresh rock shrimp (or 21 – 25 brown shrimp, cleaned and cut in pieces)
  • 1.5 sticks butter
  • 5 garlic cloves
  • 1 lemon
  • 1/2 bunch parsley (leaves removed and roughly chopped)
  • smoked paprika for garnish
Place butter and whole garlic cloves in a stainless steel or cast iron skillet. Set in the broiler or oven at 500F until the butter starts to brown on the sides and the garlic is very aromatic.  Add the shrimp into the butter and return to the broiler for 3 – 4 minutes or until the shrimp are fully cooked (semi-firm to the touch).  You can transfer to a serving piece or serve in the cooking vessel.  Garnish with the parsley leaves and smoked paprika.  Serve with toasted bread or crackers.
